Light, fresh, and ridiculously easy. This cucumber spritz is the kind of drink you start making once the weather warms up and suddenly it becomes your personality. It’s crisp, citrusy, lightly sweet, and basically tastes like spa water that got promoted to cocktail-hour status. Except this one is alcohol-free and genuinely refreshing.

If you’re looking for a healthy cucumber mocktail, this is it!

Normally, I don’t have any qualms guzzling water all day every day but woof, these winter months have me caffeinating via coffee or tea all day long. 🙃

Sometimes all it takes is to make water a little more *fancy*. Whether it’s a splash of juice, a spritz of citrus, or a few sprigs of fresh herbs, making a ‘mocktail’ of sorts helps me drink more water. 

The flavor of this cucumber spritz is super clean and refreshing. The cucumber gives it that spa-water vibe, the lime wakes everything up, and the maple syrup gives it a tiny bit of sweetness without making it sugary.

Also worth noting, this is a great use for cucumbers that are hanging out in the fridge drawer looking slightly forgotten. IYKYK.

Mocktails FTW. But… if you tripped and accidentally spilled vodka in your blender … invite me over.  😏

What You’ll Need to Make a Refreshing Cucumber Spritz

  • I use seedless cucumbers like baby cucumbers or Persian cucumbers (pictured).
  • One of my favorite kitchen shortcuts is the freshly squeezed, not-from-concentrate lime juice in a bottle. Not the citric acid in a squeeze bottle friends, I’m talking about actual lime or lemon juice.
  • If you don’t have pure maple syrup, honey or agave or classic simple syrup will work great.
  • Plain sparkling water is my go-to, but you could use club soda or any flavor of sparkling water.
  • Mint is giving all the spa-water vibes, but this is also delicious with fresh basil.

How to Make a Cucumber Spritz

Add the cucumber slices, fresh lime juice, mint leaves, maple syrup, and a pinch of salt to a blender or food processor.

Blend until completely smooth. If you want a super-smooth drink, you can pour the mixture through a fine-mesh sieve, but if you’re using a high-powered blender, it’s usually not necessary.

Fill two glasses with ice and divide the cucumber juice mixture between them. Top each glass with 4 to 6 ounces of sparkling water and give it a gentle stir.

Garnish with mint, a lime slice, or cucumber ribbons if you’re feeling fancy.

FAQs

What alcohol would you add to make this a cocktail?

I’m a gin girlie, so a cucumber gin spritzer is riiiight up my alley, but vodka or silver tequila would also be yummy. Add 1½ oz per drink.

Do I need to strain the cucumber juice?

Not necessarily. A high-powered blender makes it smooth enough to skip this step, but if you don’t have a great blender, straining is a good idea.

Could I make this by the pitcher?

Yes! Refer to the recipe card notes for exact measurements. Make the cucumber lime mixture by the pitcher and top with sparkling water when ready to serve.

Ingredients

  • 6oz cucumbers, roughly chopped – 2 Persian cucumbers or 1 small English cucumber
  • 2 tablespoons lime juice
  • 10 mint leaves
  • 2 tablespoons pure maple syrup
  • pinch of salt
  • sparkling water

Instructions

  1. In a blender, combined the chopped cucumbers, 2 tablespoons fresh lime juice, 10-ish mint leaves, 2 tablespoons pure maple syrup and a pinch of salt. Blend until smooth.
  2. You can pass the mixture through a fine mesh sieve but if you use a high powered blender you really don’t need to. Divide the cucumber juice between two glasses of ice.
  3. Top the drinks off with 4-6oz sparkling water. Garnish with mint, a lime slice or cucumber ribbons.

Notes

By the pitcher (makes 8 servings): Blend 24 oz cucumbers (about 8 Persian cucumbers or 2-3 English cucumbers), ½ cup lime juice, 40 mint leaves, ½ cup pure maple syrup, ¼ teaspoon salt. Pour into glasses of ice and top each drink with 4-6oz sparkling water.
