Description

Citrusy, herbaceous, and refreshing, this cucumber spritz is the 5-minute cucumber mocktail recipe I’ve got on repeat!


Ingredients

  • 6oz cucumbers, roughly chopped - 2 Persian cucumbers or 1 small English cucumber
  • 2 tablespoons lime juice
  • 10 mint leaves
  • 2 tablespoons pure maple syrup
  • pinch of salt
  • sparkling water

Instructions

  1. In a blender, combined the chopped cucumbers, 2 tablespoons fresh lime juice, 10-ish mint leaves, 2 tablespoons pure maple syrup and a pinch of salt. Blend until smooth.
  2. You can pass the mixture through a fine mesh sieve but if you use a high powered blender you really don’t need to. Divide the cucumber juice between two glasses of ice.
  3. Top the drinks off with 4-6oz sparkling water. Garnish with mint, a lime slice or cucumber ribbons.

Notes

By the pitcher (makes 8 servings): Blend 24 oz cucumbers (about 8 Persian cucumbers or 2-3 English cucumbers), ½ cup lime juice, 40 mint leaves, ½ cup pure maple syrup, ¼ teaspoon salt. Pour into glasses of ice and top each drink with 4-6oz sparkling water.
