Bottoms up! Refreshing and full of electrolytes this coconut water mocktail is a fun and yummy way to stay hydrated.
I’m always in the mood for a mocktail. I’m a water guzzler throughout the day but by afternoon/dinner time I’m ready to switch things up and make a beverage that is a little bit more ‘fun.’ Drinking enough water has countless health benefits including better digestion, skin health and weight management. But many of us still fall short of drinking enough. For me, making a tasty mocktail is a perfect way to boost my water intake and stay hydrated.
Each week I go to the grocery store and get 1-2 simple ingredients to make a mocktail of the week. Last week I was all about this blackberry thyme mocktail but this week I noticed a can of coconut water sitting in my fridge. Perfect! I’ve been wanting to make a coconut mojito mocktail for a while!
I love this coconut water mocktail because it:
- is delicious and has more flavor than plain water
- features coconut water which contains electrolytes like magnesium, sodium and potassium that regular water does not
- is easy to throw together and features other healthy ingredients like honey, mint and cucumbers
Mocktail ingredients:
Coconut water: I recommend getting an unsweetened coconut water to keep added sugars low.
Lime juice: you can either buy 100% lime juice in a bottle at the grocery store or squeeze some from fresh limes.
Honey mint syrup: we make a quick simple syrup with honey, water and mint to provide a little extra sweetness to this drink. This is pretty versatile- feel free to use maple syrup or agave nectar instead of honey.
How to make:
Fill a tall glass with lots of ice. Add lime juice, mint honey syrup and pure coconut water. Alternatively, you could shake everything together in a cocktail shaker and pour over ice. Add some cucumber slices and garnish with a lime wedge. Drink up!
Mint honey syrup: combine honey, water and mint in a small saucepan over medium low heat. Simmer for 5-8 minutes. Strain out the mint leaves and let cool. Store in the fridge in an airtight container for up to 2 weeks.
Variation ideas:
- To make this a sparkly drink add club soda, soda water or sparkling water. I’ve had it this way and it’s very good!
- Instead of the mint honey syrup you could add a splash of pineapple juice or mango nectar.
- Give it a creamy vibe by adding coconut milk or coconut cream.
- You can always add alcohol to make it a cocktail! White rum or vodka would be great here.
- Garnish these coconut-lime cucumber mocktails with a slice of lime, fresh herbs like a sprig of mint and toasted coconut flakes.
FAQs
Yep! It will be less sweet without the syrup. If you’d like to add sweetness add a splash of pineapple juice, sweet coconut juice or simple syrup.

To make this coconut water mocktail by the pitcher: combine 1/3 fresh lime juice, 30oz coconut water and double the mint honey syrup (and add all of it). Refrigerate and then serve over ice!

Coconut water mocktail
- 6oz unsweetened coconut water
- 1/2 oz lime juice (about 1 tablespoon)
- 1–2 tablespoons mint honey syrup
- Cucumber slices

- 1/4 cup honey
- 1/4 cup water
- 10 sprigs fresh mint leaves
Instructions
