Refreshing and tasty, this coconut water mocktail is simply a fun way to stay hydrated!

Coconut water mocktail
- 6oz unsweetened coconut water
- 1/2 oz lime juice (about 1 tablespoon)
- 1-2 tablespoons mint honey syrup
- Cucumber slices
Mint honey syrup
- 1/4 cup honey
- 1/4 cup water
- 10 sprigs fresh mint leaves
Instructions
Fill a tall glass with ice cubes. Add lime juice, mint honey syrup and coconut water. Add some cucumber slices and garnish with a lime wedge. Drink up!
Mint honey syrup: combine honey, water and mint in a small saucepan over medium low heat. Simmer for 5-8 minutes. Strain out the mint leaves and let cool. Store in the fridge in an airtight container for up to 2 weeks.
