Ericaโ€™s Thoughts

Iโ€™ve shared before how Iโ€™m not a wine gal. I can get down with rosรฉ but red wine? errrrm no thank you. I amย alsoย not a beer gal. Iย am,ย however, a tequila gal. And besides a French 75, a good margarita is my go-to drink. I love a classic margarita but also love to dream up other fun flavors. This pineapple coconut margarita was inspired by the open can of coconut cream in my fridge. I had used a little for something I was baking, and then had the rest of this can, thinking, alright, how can I use this? A tropical cocktail obvi.

This cocktail is like piรฑa colada meets margarita. It has the flavors of pineapple and coconut but instead of rum weโ€™re using tequila and of course, lots of fresh lime juice. This coconut pineapple margarita recipe scales beautifully for a pitcher, so if youโ€™re having friends over (or just pretending itโ€™s summer), youโ€™re set. And donโ€™t skip the lime sugar rim- itโ€™s citrusy, sparkly, and adds just the right touch of flair. Grab your friends and get ready for a tropical escape!

Simple Ingredients Youโ€™ll Need to Make Pineapple Coconut Margaritas

picture of the ingredients needed to make the recipe

Tequila: I use blanco tequila, but you could use reposado tequila if you prefer.

Pineapple juice: you can find 100% pineapple juice in the juice aisle or in a can in the canned fruits aisle of the grocery store.

Coconut cream: canned coconut cream makes these margaritas velvety and luscious.ย Notย to be confused with cream of coconut, which is sweeter and syrupy.

Lime juice: use 100% or fresh-squeezed lime juice. The brightness and acidity is a perfect complement to pineapple and coconut.

Agave syrup: agave nectar adds just a touch of sweetness to enhance the lime, coconut and pineapple.

Lime zest + sugar: for a zippy, sparkly rim that elevates each sip.

How to Make this Pineapple Coconut Margarita Recipe

Make the lime sugar rim by mixing sugar and lime zest in a shallow bowl. Rub a lime wedge around the rim of the glass, then dip in the lime sugar to coat. Fill glasses with ice.

Fill a cocktail shaker with ice. Add tequila, pineapple juice, coconut cream, lime juice, and agave syrup. Shake vigorously until frothy and well combined.

Fill your prepared glass with ice. Strain cocktail mixture into the glass. Garnish with a lime wedge, pineapple chunks or a fresh pineapple wedge. Happy hour time baybay!

Expert Tips

  • Shake or stir well to fully incorporate the coconut cream. If you donโ€™t have a cocktail shaker you can use a mason jar.
  • Chill your glasses in the freezer for a few minutes before serving.
  • This cocktail is as good as your liquor, use good tequila for the best taste!

Variation (or Substitution) Ideas

  • Make a toasted coconut rim by combining sugar and crushed toasted coconut flakes.
  • Add triple sec instead of agave to make things a little sweeter. Triple sec is an orange liqueur that is often in a traditional margarita.
  • Agave syrup is traditional in margaritas but you could use simple syrup as well.ย โ€จ
  • You can use cream of coconut instead of coconut cream but if you do, omit the agave. Although they sound very similar, they are quite different. Coconut cream is unsweetened and cream of coconut is heavily sweetened and syrupy.
  • Blend it for a frozen version!
  • Make it a mocktail: omit the tequila and top it off with sparkling water or coconut La Croix.

FAQs

Whatโ€™s the difference between coconut cream and cream of coconut?

Coconut cream is thick, unsweetened, and made from the fatty part of coconut milk. Itโ€™s rich and velvety but neutral in flavor. Cream of coconut, on the other hand, is sweetened and syrupy, used in drinks like piรฑa coladas. If you use cream of coconut, reduce or omit any added sweeteners.

Can I make this ahead of time?

Definitely. Vigorously whisk ingredients in a large pitcher without ice and store in the fridge. Just give it a stir before serving and pour into glasses with ice.

What should I serve with pineapple coconut margaritas?

Great question, let me tell you. A huge basket of tortilla chips and a vat of guacamole, Baja shrimp tacos, corn salad, and Mexican rice.
