And besides a French 75, a good margarita is my go-to drink. I love a classic margarita but also love to dream up other fun flavors. This pineapple coconut margarita was inspired by the open can of coconut cream in my fridge. I had used a little for something I was baking, and then had the rest of this can, thinking, alright, how can I use this? A tropical cocktail obvi.
This cocktail is like piรฑa colada meets margarita. It has the flavors of pineapple and coconut but instead of rum weโre using tequila and of course, lots of fresh lime juice. This coconut pineapple margarita recipe scales beautifully for a pitcher, so if youโre having friends over (or just pretending itโs summer), youโre set. And donโt skip the lime sugar rim- itโs citrusy, sparkly, and adds just the right touch of flair. Grab your friends and get ready for a tropical escape!
Simple Ingredients Youโll Need to Make Pineapple Coconut Margaritas

Tequila: I use blanco tequila, but you could use reposado tequila if you prefer.
Pineapple juice: you can find 100% pineapple juice in the juice aisle or in a can in the canned fruits aisle of the grocery store.
Coconut cream: canned coconut cream makes these margaritas velvety and luscious.ย Notย to be confused with cream of coconut, which is sweeter and syrupy.
Lime juice: use 100% or fresh-squeezed lime juice. The brightness and acidity is a perfect complement to pineapple and coconut.
Agave syrup: agave nectar adds just a touch of sweetness to enhance the lime, coconut and pineapple.
Lime zest + sugar: for a zippy, sparkly rim that elevates each sip.
How to Make this Pineapple Coconut Margarita Recipe


Make the lime sugar rim by mixing sugar and lime zest in a shallow bowl. Rub a lime wedge around the rim of the glass, then dip in the lime sugar to coat. Fill glasses with ice.

By the glass:
- 2oz tequila
- 2oz pineapple juice
- 1 1/2 oz coconut cream

Lime sugar rim:
- zest from one whole lime
- 1โ2 tablespoons sugar
By the pitcher:
- 2 1/4 cups tequila
- 2 cups pineapple juice
- 1 13.5oz can coconut cream
- 3/4 cup fresh lime juice
- 1/4 cup agave nectar
- lime and/or pineapple wedges, for serving
Instructions
- In a small, shallow bowl combine sugar and lime zest to make the lime sugar.
- Fill a cocktail shaker with ice. Add 2oz tequila, 2oz pineapple juice, 1 ยฝ oz coconut cream, ยพ oz lime juice and ยฝ oz agave syrup. Shake vigorously until combined.
- Run a lime wedge around the rim of a short glass to moisten. Dip the glass into the lime sugar. Fill glass with ice.
- Pour margarita over ice, garnish with a lime slice or pineapple wedge and BOTTOMS UP.
- Pitcher: combine all ingredients in a large pitcher and stir vigorously. Serve over ice in glasses with a lime sugar rim.
