Alright, I am quite confident that these hot honey Brussels sprouts could transform any sprout hater into a sprout believer.
I never ate Brussels sprouts growing up because my dad doesn’t like them. He says he’d been traumatized by sad little boiled, soggy balls his mom made that reeked up the house and made him gag. Sounds fun right, lol.
But I am confident that with a little love, the right seasonings and condiments and the right cooking method fresh Brussels sprouts can be one of the tastiest vegetables out there. It is personally one of my all-time favorite vegetables!

- Versatility: you can apply this same recipe and cooking method to nearly any hearty vegetable and get delicious results every time.
- Deliciousness: ummm… hot honey? Feta? Roasted Brussels sprouts? YES PLEASE. Also can we all just agree that the super crispy Brussels sprouts leaves are the best part? Mmkay great.
What you’ll need to make Hot Honey Brussels Sprouts:
Brussels Sprouts: the star ingredient, Brussels sprouts are in season in the fall winter and can be found in the produce section of the grocery store. If Brussels sprouts are not in season or not available, you can use frozen Brussels sprouts.
Extra virgin olive oil: the olive oil provides flavor, moisture and promotes even browning on the sprouts. You can also use avocado oil.
Hot honey: hot honey is honey, but spicy. It is usually made by combining honey and chili flakes. It is found in most grocery stores in the same place you would find regular honey. I like the brands Mike’s Hot Honey and Momofuku chili crunch honey. See FAQs for how to make hot honey if you can’t find it!
Feta cheese: cubes of salty feta provide the perfect finish to this dish and pair perfectly with spicy honey. Feel free to omit for a dairy-free version or sub with goat cheese or parmesan cheese.
Chives: chives provide a lovely herb-y, onion-y finish to this recipe. You could also use green onions.
Salt and pepper: these two pillars provide the baseline flavor for the Brussels sprouts and then hot honey and tangy feta come in with the powerful flavor punches!
How to make:
Preheat the oven to 450 degrees Fahrenheit.
Quarter the Brussels sprouts. I like quartering them to give more surface area and space to get golden crispy and delicious.
Line a rimmed baking sheet with a silicone baking mat or parchment paper. Place the Brussels sprouts in a single layer on the prepared baking sheet and drizzle with the olive oil and hot honey. Sprinkle with salt and fresh cracked pepper.
Roast for 20-25 minutes until golden brown and tender. Some of the little outer leaves will fall off and get super crispy and that’s the best part.
Cube or crumble the feta cheese and add it to the Brussels sprouts. Sprinkle on the chives. Drizzle with more hot honey and serve hot.
This is the perfect side dish for nearly any dinner but I’m not gonna lie, I’d be perfectly happy to eat a huge plate of these AS my dinner.
Perfect Air Fryer Hot Honey Brussels Sprouts
Place quartered Brussels sprouts in a bowl and drizzle with oil and honey and season with salt and pepper. Mix until well-coated. Place in the air fryer and air fry at 400 degrees for 12 minutes until crispy, golden brown and tender. Finish with extra honey, feta and chives!
Variation Ideas:
- Use a different veggie: try this recipe with winter squash, sweet potato, broccoli, cabbage, cauliflower or carrots!
- Use a different cheese: if you’re not a fan of feta you can use goat cheese, parmesan cheese or extra sharp white cheddar cheese
- Use a different sweetener: if you don’t consume honey, you can substitute pure maple syrup and a teaspoon of red pepper flakes for a similar result.
- Add a little citrus: if you like a bright and acidic punch, finish these off with some lime zest, lemon zest or squeeze of fresh lemon juice!
FAQs:
Good news- you can make homemade hot honey! In a small saucepan over medium heat combine one cup honey and two teaspoons red pepper flakes or two teaspoons hot sauce. Simmer for a minute, then remove from heat and allow chili flakes to steep in the honey for about five minutes. You can strain out the chili flakes, but you don’t have to. Transfer to a clean glass jar or squeeze bottle!
Yep! Do not thaw the Brussels sprouts and prepare the recipe as written, tossing the sprouts with the seasonings, oil and honey and roasting per the recipe.
Store in an airtight container in the fridge. Keeps for four days.
My personal preference is to plop the leftovers on a baking sheet and put them under the broiler for 1-2 minutes. This warms them through and recreates the super crispy texture that I love.
This recipe would be delicious with cauliflower, broccoli, cabbage, sweet potatoes, carrots or winter squash.
