Garlic Almond Chicken Tenders with Roasted Garlic Aioli

Who doesn’t love a juicy, crunchy chicken tender with a delightful dipping sauce!? And when you make it at home with simple ingredients, it is THAT much better. I’m obsessed with these garlic almonds from Sante Nuts which make this recipe as simple as can be.
The coating for these tenders is simply the seasoned nuts, ground up. If you do not have these garlic almonds you can still make this recipe! Make sure to check the recipe notes on which seasonings you can add to unseasoned almonds for a similar effect. Description
Flavorful crunchy chicken tenders baked to perfection and served up with a roasted garlic aioli! This healthy, gluten-free recipe is sure to become a fave.
Ingredients
Chicken
- 1lb chicken tenders
- kosher salt and fresh cracked pepper
- 1 egg + 1 egg white
- 2/3 cup Santé garlic almonds
- avocado oil spray
Aioli
- 1 head garlic
- 1.5 teaspoons extra virgin olive oil
- kosher salt and fresh cracked pepper
- 1/2 cup good quality mayo
- 2 teaspoons worcestershire sauce
- juice of 1/2 lemon
Instructions
Aioli
Preheat oven to 400 degrees. Slice the very top off the head of garlic so the tips of the cloves are exposed. Drizzle the olive oil gently, allowing some of it to seep through the cloves. Sprinkle head with salt and pepper. Wrap the garlic in foil and bake for 45-55 minutes until cloves are deep golden brown. Let cool.
Squeeze the cloves of garlic out and mash into a paste. Combine the mayo, roasted garlic, lemon juice, worcestershire sauce and a pinch of salt and whisk to combine well.
Chicken
Increase oven temp to 425 degrees. Pat the chicken tenders dry and season with big pinches of salt and pepper. In a food processor, pulse the almonds until they are finely ground. Whisk the egg and egg white together. Dredge each tender in the eggs, letting excess drip off. Then coat in ground almonds, gently pressing the almonds to adhere to the chicken. Place a wire rack on a large baking tray and line the tenders on the rack. Spray with avocado oil spray. Bake for 8 minutes, flip the tender and bake for an additional 8 minutes, until chicken is just cooked through and internal temp is 165 degrees.
Serve with aioli, veggies, potatoes or rice! We ate this meal with blanched green beans and crispy smashed potatoes.
Notes
If you are not using seasoned almonds- substitute an equal amount of roasted almonds and add 1/2 teaspoon each smoked paprika, ground black pepper, kosher salt, garlic powder and 1/8 teaspoon cayenne pepper to the food processor. If your almonds are not roasted, roast them at 300 degrees for 25-30 minutes until golden and toasty on the inside.
If you want to take a shortcut and skip roasting the garlic you sub a few cloves of minced garlic in the aioli.
Make sure you use a wire rack on the baking tray so the crunchy coating does not get soggy.
For the smashed potatoes, boil baby gold potatoes or quartered Yukon gold potatoes for 25 minutes until barely tender, drain and place on a baking sheet. With the heel of your hand or drinking glass smash down. Drizzle with olive oil and season with salt, pepper, smoked paprika and garlic powder. Broil for 5-6 minutes until crispy and browned.
For the green beans, boil for 5 minutes and plunge into an ice bath to stop the cooking. Reheat by sautéing in a little olive oil, season as desired!
