Hashbrown Avocado Toast
If you thought avocado toast couldn’t get any better… just wait until you make it with crispy hashbrowns instead of bread. The golden, crunchy edges, the creamy avocado, and the cheesy eggs on top? Absolute perfection. Whether it’s breakfast, lunch, or breakfast-for-dinner, this hashbrown avocado toast hits every single time.

BFD y’all. Breakfast for dinner. When I’m short on time (or brainpower), this hashbrown avocado toast is one of my go-tos. It’s easy, balanced and a meal the whole family loves. Which is why it’s perfect for episode five of Embarassingly Easy Dinners ft. Trader Joe’s shortcuts.
I think the reason I don’t do breakfast for dinner very often is because many breakfast meals are quite lacking in veggies and I like to dinner to have lots of veg. But with a big pile of microgreens and green onions, and maybe an extra little salad on the side, this feels balanced in the best way. Finished with a lil hot honey drizzle and/or crunchy chili oil, muah! So good.
I serve this to my girls (ages 3 and 5) deconstructed. AKA – hashbrown patties, scrambled eggs, smashed avocado, cottage cheese – all separate. With some fresh fruit on the side!
What You’ll Need to Make Hashbrown Avocado Toast:


Hashbrown patties: Crispy, golden, and way more fun than bread. I usually grab the ones from Trader Joe’s.
Avocado: Use perfectly ripe avocados. A quick spritz of lemon or lime keeps it fresh and bright.
Cottage cheese: Cottage cheese adds protein and creaminess that balances everything out. Feel free to omit if you don’t like cottage cheese, but I love the extra protein!
Eggs: I love them soft-scrambled until fluffy, the key is cooking low and slow for those big, tender curds.
Seasoning: I use kosher salt, black pepper and all-purpose seasoning (I like Kinders).
Sharp cheddar cheese: Just enough for a little melty, savory moment over the eggs.
Toppings: microgreens, green onions, hot honey, red pepper flakes, chili onion crunch, squeeze of lime or lemon!
How to Make Mini Hash Brown Avocado Toasts:
Cook the hashbrown patties according to the package directions. I air fry mine at 390°F for 14 minutes, flipping halfway through, until they’re golden and crisp.

Smash the avocado in a small bowl, spritz it with lemon juice or lime juice, and season with salt.


Whisk the eggs with a pinch of salt, pepper, and all-purpose seasoning. Heat a ceramic nonstick skillet over medium-low heat and add a swish of oil. Cook the eggs, stirring occasionally (not constantly!) until large, soft curds form and they’re cooked through. Remove from heat, sprinkle with cheddar cheese, and cover the pan with a plate to melt the cheese.


Now, layer it up: crispy hash browns → avocado mash → cottage cheese → eggs. Add your toppings – microgreens, green onions, hot honey, or chili crunch oil, and you’re done! Pair with fresh fruit or any other side dishes you love.
Variation Ideas for your Hashbrown Avocado Toast
- Kid-friendly: serve everything deconstructed!
- Make your egg however you like it! Poached egg, fried egg, egg whites, etc.
- Southwest: Add pico de gallo and a drizzle of chipotle aioli.
- Breakfast sandwich: Stack everything between two hashbrown patties for a handheld version.
- Other cheese ideas: goat cheese, parmesan cheese or mozzarella!
- Top it up y’all: red onion, hot sauce, bagel seasoning, drizzle of olive oil or honey, handful of arugula, the sky is the limit!

FAQs
I’ve never tried this but I imagine it would be like a delicious hash you eat with a fork vs this more ‘toast’ format.
Keep everything separate in airtight containers. Re-crisp the hashbrowns in the air fryer and reheat the eggs gently before assembling.
I’d go for bagel seasoning and/or a drizzle of honey!
