Cook Once Eat Twice Series: 6 Dinner Combos That Turn Into 12 Meals
Over the past year I’ve started leaning heavily on what I call my Cook Once Eat Twice approach to weeknight dinners. Instead of cooking a completely different meal every night, I make one really good base recipe and intentionally transform the leftovers into something new the next day. It keeps dinner interesting, saves a surprising amount of time during the week, and honestly makes meal planning feel way less overwhelming.


How the Cook Once Eat Twice Method Works:
- Each Cook Once Eat Twice dinner combo includes two meals built around the same base recipe. Cook once on night one, then reinvent the leftovers into a totally different meal the next night.
- These dinners save time during busy weeks while still keeping things interesting so it doesn’t feel like you’re just reheating the same meal.
- Many of the recipes intentionally make extra protein so the second dinner comes together even faster.
- You’ll see a mix of cuisines and cooking methods: Korean rice bowls turning into fusion burritos, baked fish becoming burgers, and Italian-style meatballs turning into a saucy stir-fry.
- All of these are real dinners we make in our house and they’re flexible enough to scale up for meal prep or down for a smaller household.
Below are six of my favorite Cook Once Eat Twice dinner combinations, which means TWELVE total meals.

Cook Once Eat Twice Dinner Combos:
Korean Shredded Beef Rice Bowls → Burritos
Night 1: Korean Shredded Beef Rice Bowls
Saucy Korean shredded beef served over fluffy rice with pickled cucumbers, crispy onions, avocado, kimchi, peanuts, and a generous drizzle of sriracha mayo.
Night 2: Korean Shredded Beef Burritos
Leftover Korean shredded beef wrapped into warm tortillas with all your favorite toppings from the rice bowls, then toasted until golden.


Meal Prep Chicken Breast → Chicken Broccoli Pasta Bake
Night 1: Meal Prep Chicken Breast
Thin-sliced chicken breasts coated in a simple spice blend, then broiled until juicy and lightly caramelized. Slice it up and serve alongside smashed potatoes, fluffy coconut rice, chili garlic spaghetti, roasted carrots, a big kale salad, hot honey Brussels sprouts or cucumber edamame salad.
Night 2: Cheesy Chicken & Broccoli Pasta Bake
Leftover chicken gets tossed with macaroni, broccoli florets, and shredded white cheddar, and baked into a cheesy pasta casserole.


Mediterranean Baked Cod → Cod Burgers
Night 1: Mediterranean Baked Cod
Cod fillets roasted on a sheet pan with cherry tomatoes, zucchini, shallot, and briny kalamata olives. Finished with parsley garlic oil and a squeeze of lemon.
Night 2: Cod Burgers
Leftover baked cod gets flaked and mixed with herbs and breadcrumbs, then pan-seared into golden patties. Serve on toasted brioche buns with creamy herb aioli, lettuce, avocado, and red onion.


Meatball Sub Sandwiches → Sweet Chili Ginger Meatball Stir-Fry
Night 1: Meatball Sub Sandwiches
Homemade ricotta meatballs piled into toasted garlic bread hoagies with marinara sauce and melty mozzarella.
Night 2: Sweet Chili Ginger Meatball Stir Fry
Leftover meatballs tossed with bell peppers, onion, and snap peas in a sticky ginger sweet chili sauce, then served over jasmine rice.


Balsamic Chicken + Pesto Rigatoni → Chicken Pesto Sliders
Night 1: Balsamic Chicken + Pesto Rigatoni
On night one, you’ll grill up a big batch of balsamic chicken and serve it over simple pesto rigatoni pasta with burst tomatoes.
Night 2: Chicken Pesto Sliders
Then night two, use leftover balsamic chicken and pesto to make these incredible cheesy, melty, pesto chicken sliders.


Beef Burrito Bowls → Enchilada Pie
Night 1: Beef Burrito Bowls
Mexican shredded beef served over cilantro lime rice with fajita veggies, a high-protein queso sauce, and all the toppings. Fresh, colorful, and endlessly customizable.
Night 2: Enchilada Pie
Use that leftover saucy shredded beef and layer it with tortillas, black beans, corn salsa, enchilada sauce, and Mexican blend cheese to make a super yummy enchilada-style casserole.


These are the kinds of dinners that make weeknights feel a whole lot easier. Cook once, enjoy a great dinner, and then turn the leftovers into something totally new the next night without starting from scratch again.

It varies by recipe, but most of these dinners make about 4–6 servings, which is perfect for dinner one night and leftovers for the second meal. Some recipes (like the Korean shredded beef or meal prep chicken) make an even larger batch, so you may have extra for lunches too.
Nope! Most of these recipes already make enough protein for the second meal. The only time you might want to double it is if you’re feeding a larger family and won’t have much leftover for night two.
Store the cooked protein separately from toppings or sauces so everything stays fresh and the second dinner comes together quickly.
Yes! Many of these recipes (especially the Korean or Mexican shredded beef) can be cooked in advance and used for multiple meals throughout the week. OR you can prep and freeze for up to 6 months.
