Wicked Easy Buffalo Chicken Flatbread
Buffalo chicken wings meet cheesy pizza in an easy weeknight dinner of dreams. This buffalo chicken flatbread takes a few shortcuts which means you can have a delicious dinner on the table in 15 minutes flat. It is also perfect for football season- a great game day appetizer!

Confession: I donโt love buffalo chicken wings. Or any wings, really. Call me lazy, but theyโre too much work for the payout? Do you know what I mean!?
But make it a shredded chicken situation with lots of melty cheese and fresh herbs and Iโm in.
So weโre making a buffalo chicken pizza recipe today. I know that I say my recipes are super easy, (and sometimes thereโs simply too much chopping for it to be considered quick, I know I know) but Iโm not lying with this one yโall.
Thanks to naan bread, rotisserie chicken and premade sauces (buffalo sauce and ranch) these flatbreads come together in a snap. They are balanced, satisfying and tasty- all the prerequisites for a good meal!
Simple ingredients youโll need to make buffalo chicken flatbread:

Chicken: cooked chicken breasts or rotisserie chicken work perfectly for this recipe.
Hot sauce: use your favorite buffalo sauce! I like Primal Kitchen buffalo sauce because it is thicker and not as spicy. It is usually found in the โhealthy foodsโ aisle of the grocery store. Other brands of hot sauce can be found in the condiments aisle.
Ranch dressing: ranch dressing is the cool, creamy counterpart to fiery buffalo sauce. It serves as the pizza sauce and donโt forget an extra drizzle on top! If youโre a fan, you could swap out the ranch for a drizzle of blue cheese dressing.
Mozzarella cheese: mozzarella is mild, melty and iconic for pizza. You could use another mild variety like provolone or jack cheese.
Red onion: red onion provides a pop of color, flavor and nutrition. Find it in the produce aisle of the grocery store.
Green onions: pretty sure I canโt make a recipe without fresh herbs, these pair nicely with the spicy and creamy vibes of this delicious flatbread.
Cilantro: the finishing touch!
Naan or store-bought flatbread: you can of course make homemade pizza dough if you are extra delicious like that buuuut, I was channeling โeasy as possibleโ for this recipe so weโre utilizing storebought options like naan or premade pizza crust. I love the Stonefire naan, which I find in the bakery section (not the bread aisle) of the grocery store.
Blue cheese crumbles (optional): okay so I am reeeeally not a fan of blue cheese- but I know some people love it with wings- so if you are one of those people, add a sprinkle of blue cheese!

How to make:
Preheat oven to 475 degrees Fahrenheit and place a pizza stone in the oven while it preheats. If you donโt have a pizza stone, you could use a large sheet pan.


Shred the chicken. I use a rotisserie chicken and shred it using the paddle or whisk attachment of my stand mixer- it sounds weird but it makes perfectly shredded chicken in 30 seconds! Toss the shredded rotisserie chicken with 3 tablespoons buffalo sauce in a medium bowl until well combined.


Top flatbread with a dollop of ranch dressing, spreading it over the entire surface with the back of a spoon. Top with mozzarella, buffalo chicken, thinly sliced red onion and chopped green onions.


Carefully transfer the assembled flatbreads to the preheated pizza stone or prepared baking sheet. The high heat will help crisp up the bottom of the flatbreads, making them more pizza-like. Bake for 10 minutes until the bottom is crispy and cheese is melted and bubbly. Drizzle with extra buffalo sauce and ranch and top with fresh cilantro and another sprinkle of green onions. This makes a great appetizer but can also be the main course!


Expert tips and variation ideas:
- If you cook chicken breast instead of using rotisserie chicken, season the chicken with onion powder, garlic powder, olive oil, salt and black pepper for more flavor.
- Use a stand mixer to shred up a rotisserie chicken in less than 60 seconds!
- For best results, grab a good quality naan or flatbread. I personally would not use pita bread as it is too dry and not soft like naan.
- If you have it, make sure to use a pizza stone, so the crust crisps up and doesnโt get soggy.
- Switch things up with a finishing drizzle of blue cheese dip if you like blue cheese!
- Other topping ideas: cherry tomatoes, bell pepper slices, bacon, red pepper flakes, shredded carrots, pepperoncini or banana peppers or fresh arugula.

FAQs
Yes! Place your assembled buffalo chicken flatbread in the basket and air fry at 360 degrees for 7-9 minutes until the edges are crispy and cheese is melted. You may have to work in batches depending on the size of your air fryer.
I havenโt tried these with barbecue sauce but Iโm quite certain they would be delicious swapping out the buffalo sauce for barbecue sauce. You could also toss the chicken with pesto but in that case I would also ditch the ranch dressing.
You can assemble the flatbreads ahead of time and keep them in the fridge but wait to bake until youโre ready to serve.
Wrap the leftovers tightly in plastic wrap or store in an airtight container in the fridge for up to three days.
I like to pair spicy buffalo chicken flatbreads with a green vegetable like zucchini fries, roasted brussels sprouts or a simple side salad. Yum!โจ

Notes
- Iโm morally opposed to blue cheese (okay, an exaggeration but I donโt like it mmkay?) BUT I do know that blue cheese pairs well with buffalo wings so if you are a blue cheese lover you should add a sprinkle!

Hello Erica!! I made this for our Sunday night dinner and it was great!! The stone was definitely the way to go. Naan was nice and crunchy with a nice chewy pull when you bit into it. I made my chicken breasts in the crockpot and then shredded it with a fork, and then added sauce and placed on the flatbread. Thanks for a keeper recipe.
