Ingredients
Units
Scale
- 8oz cooked chicken, shredded (about 2 cups total)
- 3 tablespoons buffalo sauce + extra for drizzle
- 2 tablespoons ranch dressing + extra for drizzle
- 4oz mozzarella, freshly grated (about 1 heaping cup total)
- 1/4 small red onion, thinly sliced
- 3 green onions, chopped
- 1/2 cup cilantro leaves
- 8oz premade naan or flatbread (like the Stonefire brand or similar)
Instructions
- Preheat oven to 475 degrees Fahrenheit and place a pizza stone in the oven while it preheats. If you don’t have a pizza stone, you could use a regular baking sheet.
- Shred the chicken if it isn’t already. I use a rotisserie chicken and shred it using the paddle or whisk attachment of my stand mixer- it sounds weird but it makes perfectly shredded chicken in 30 seconds! Toss the shredded chicken with 3 tablespoons buffalo sauce until well combined.
- Assemble the flatbreads- spread each naan or flatbread with a dollop of ranch dressing, spreading it over the entire surface. Layer the mozzarella, buffalo chicken, thinly sliced red onion and chopped green onions. Top with a little more mozzarella.
- Carefully transfer the assembled flatbreads to the preheated pizza stone. Bake for 10 minutes until the bottom is crispy, the edges are golden brown and cheese is melted and bubbly. Drizzle with extra ranch and buffalo sauce and top with fresh cilantro. Mmmmmm. 😋
Notes
- I’m morally opposed to blue cheese (okay, an exaggeration but I don’t like it mmkay?) BUT I do know that blue cheese pairs well with buffalo wings so if you are a blue cheese lover you should add a sprinkle!
