Say it with me, nutrition does not need to be complicated. I feel marginally ridiculous for posting a โ€˜recipeโ€™ for yogurt and granola but yโ€™all! Sometimes we need a reminder that the simplest things can be nutritious and delicious.

These raspberry parfaits are a balance of lean protein (Greek yogurt), complex carbohydrates (homemade granola) and fresh fruit (raspberries!) I like to keep these prepped in the fridge because everyone in my house loves them. Ka-La takes a jar for his mid-morning snack at work and this is a sure-fire way to get my girls stoked about yogurt haha!

I personally like them as a post-workout snack so that Iโ€™m not spiraling into a hangry monster by lunch. Each parfait boasts 13 g protein, 5 g fiber and 30 g carbohydrate, the perfect balance for a snack if ya ask me! Feel free to scale up the quantities to make these more โ€˜meal-sizedโ€™- we use them mostly as a snack or dessert.

What Youโ€™ll Need to Make Raspberry Parfaits

Greek yogurt: creamy and protein-rich, Greek yogurt is the base for these parfaits. Use plain yogurt for a tangy contrast to the sweetness of the jam and granola. I use 2% Greek yogurt but you can use nonfat or whole milk yogurt, whichever you prefer.

Raspberry jam: look for a high-quality jam with minimal added sugar for the best flavor. I love to make my own when raspberries are in season in the summer. You could also use frozen raspberries to make a quick raspberry chia jam.

Raspberries: juicy, sweet-tart raspberries provide freshness and a pop of color.

Maple pecan granola: I am currently OBsessed with this granola. It is crunchy, nutty and the perfect balance of salty sweet. It is so easy to make and Iโ€™m eating it with everything. If you donโ€™t make homemade granola you can use your favorite storebought variety.

How to Make an Easy Raspberry Parfait:

Gather your jars: Grab four clean half-pint jars or small airtight containers.

Layer the ingredients: In each jar, layer ยฝ cup Greek yogurt, 1 tablespoon raspberry jam, ยผ cup fresh raspberries, and ยผ cup granola.

Store: secure the lids on the jars or containers and store them in the fridge for up to five days. Thatโ€™s it! Raspberry parfait dessert, breakfast or snack!

Variation Ideas

  • Swap the jam: try strawberry, blackberry, peach or apricot jam for a different flavor.
  • Instead of jam make a raspberry sauce: whisk together 1 tablespoon water with 2 teaspoons cornstarch in a small saucepan and add 3 cups raspberries, 1/4 cup sugar and 1 teaspoon fresh lemon juice. Simmer for 3 minutes on medium heat, stir in 1/2 teaspoon vanilla extract, then let it cool in a small bowl before using it in this recipe or any quick dessert recipes!
  • Add other fresh fruit: use any seasonal fruits you love. Pomegranate arils, sliced bananas, diced peaches, sliced strawberries, blackberries or apple are all delish.ย 
  • Make it extra special: use an electric whisk or the whisk attachment on a stand mixerย to whip up someย heavy cream and top parfaits with whipped cream and sprinkles to make this feel more โ€˜dessert-yโ€™.
  • Add nutrition boosters: sprinkle in chia seeds, flaxseeds or hemp hearts for a boost of fiber and heart-healthy fats.
  • Blend the raspberry layer: blend the Greek yogurt and raspberry purรฉe in a mixing bowl before layering it in the parfait.

FAQs

How long do these last in the fridge?

I keep them in the fridge all week long, up to five days! The granola does get a little softer, but I donโ€™t mind that. If you want, you can layer the yogurt, jam and raspberries and top with granola when youโ€™re ready to eat.

Can I use frozen raspberries?

Yep. Thaw the raspberries before layering them into the parfaits to avoid excess liquid.

How could I make this lower in sugar?

Be sure to use unsweetened Greek yogurt and you can opt for a low sugar or sugar-free jam.

What size jars are those?

I use half-pint (8oz) jars but if you want to make slightly larger parfaits, use pint (16oz) jars. You could also use any small airtight container.

What jam are you using?

I make lower sugar homemade raspberry jam using the recipe on the pectin box. But I have thoughts about a quick chia jam in the recipe notes section!

Notes

Jam: every summer I make homemade strawberry and raspberry freezer jam with fresh summer berries (I use the recipe on the box of lower sugar pectin!) If I run out, I love to make a quick chia jam. To make enough raspberry chia jam for this recipe: mash 1 cup fresh raspberries until liquid-y, add 1 tablespoon honey or maple syrup and 1 tablespoon chia seeds. Whisk well and let sit for at least 10 minutes until thickened. Itโ€™s like magic!
