The recipe story:

If you know me and my food vibe then you know that Iโ€™m all about the sauce. Throughout my journey to become a registered dietitian, I learned what it truly means to have a healthful, balanced diet. (hint: it has nothing to do with all the gimmicky fads out there!) When I was first learning to cook and prepare meals on my own, I disovered quickly that without spices, condiments and sauces, a person could burn out fast on the โ€œhealthy foodsโ€.

I mean, one can only eat plain salmon, quinoa and green beans for so long right?

Thatโ€™s why I love coming up with delicious homemade sauces to add fresh flavor and variety to meals. Having a sauce and spice arsenal will be your secret weapon to healthy eating.

A few weeks ago I had the idea for these chimichurri bowls and knew I needed my own chimichurri recipe stat. I had a little leftover chimichurri, mixed it with a spoonful of creamy mayo and slathered it on my turkey sandwich. The next day I used it as a dip for cucumbers and carrots. And tonight Iโ€™m serving it on burgers with sweet potato fries. So yeah, I couldnโ€™t not share this simple deliciousness with yโ€™all. Iโ€™m slightly embarassed to call this a โ€œrecipeโ€ but here we are.

What you will need to make this chimichurri aioli recipe:

Mayo: I love to use avocado oil mayo but you can use any kind you like!

Chimichurri: most grocery stores will have a premade chimichurri sauce either fresh in the deli section or canned in the condiment aisle. This homemade hot chimichurri sauce combines fresh parsley, arugula, garlic cloves, pickled green jalapeรฑos, red wine vinegar, extra virginย olive oil, kosher salt and black pepper in a small food processor and is blitzed together in seconds. Super easy.

How to make:

Blitz together a quick chimichurri sauce or take a shortcut with a premade variety from the store.

Combine mayo and chimichurri in a small bowl and whisk until smooth and combined. DONE.

A few variation ideas:

  • Add a pinch of red pepper flakes for the perfect kick
  • Squeeze in some fresh lemon juice for more zing
  • Bump up the fresh herbs in the chimichurri by adding fresh cilantro and fresh oregano

Ideas for what to use chimichurri mayo on:

  • Drizzled on chimichurri bowls with roasted veggies
  • As a dip for fresh vegetables like cucumbers, carrot, radish, tomatoes or broccoli

Can I make this vegan?

To make a vegan chimichurri aioli, just ensure that you use a vegan mayo.

How should I store the leftovers?

I store my leftover chimichurri mayo in tightly sealed mason jar in the fridge for up to a week.

I donโ€™t like mayo, could I something else?

Well first, I want to reassure you that you canโ€™t really โ€˜tasteโ€™ the mayo per se. It wonโ€™t be exactly the same texture/consistency but you could sub plain Greek yogurt or sour cream for the mayo.
