Say hello to your new breakfast obsession- bacon avocado toast. Perfectly toasted sourdough, creamy avocado, crispy bacon, tangy feta and spicy honey, THIS is how I want to start my day, every day.

Why I love avocado toast:

Oh my my, how and where do I even BEGIN!?

If you follow me on social media than you know. I am obsessed with avocado toast. I eat it for breakfast nearly every single morning and it is my favorite way to start the day. The balance of carbohydrates, healthy fat and protein provides the perfect source of sustaining fuel for my morning. And not is it balanced and nutritious, it is SO YUMMY.

Hereโ€™s the thing though. I consider myself an avocado toast expert and not all avocado toast is created equal. There are a few MUST-DO simple steps to making an amazing slice of avocado toast.

The keys to a good slice of avocado toast:

  • Good bread: friends, you cannot use Jo Shmo sliced bread. Grab a good quality loaf of sourdough or whole grain bread from your local bakery or even the bakery of a regular grocery store. I recommend getting the unsliced loaf and cutting a piece each time you want avocado toast. This way you have a thick, fresh slice that isnโ€™t dried out.
  • Griddle the toast: toasting the bread in a pan vs. a toaster is a game changer.
  • Mayo, butter or olive oil: following along with the toasting in a pan, you must use a source of fat on the outside of the bread to lock in moisture and create a golden brown crust. My preferred option is a good quality mayo (like pure avocado oil mayo) or olive oil because they have higher smoke points than butter.
  • Citrus: do not forget to spritz your avocado with lime or lemon juice! That zing offers balance and flavor that is understated but irresistible.
  • Toppings: toppings = flavor. This part is wildly customizable but my go-tos are 1) some type of cheese (usually feta) 2) herbs like green onions or cilantro 3) protein like bacon or eggs and 4) something spicy like chili crunch or spicy honey

What youโ€™ll need to make bacon avocado toast:

Sourdough bread: you can use any bread, but sourdough is my favorite. I like to buy a loaf from a local bakery or the bakery at the grocery store.

Mayo: this is to toast the bread in a skillet, you could also use oil or butter but I love to use mayo!

Avocado: my tip for perfect avocados is to buy them green and hard and let them ripen in your own house. When you buy them a ripe avocado from the store, you risk getting a bad one!

Lemon: lime juice will work as well but I actually prefer a spritz of lemon for avocado toast!

Green onions: fresh herbs add amazing flavor and green onions are the perfect addition.

Feta: tangy and salty, feta pairs perfectly with bacon.

Bacon: use whatever kind of bacon you like, thick-cut, regular bacon, turkey bacon, etc.

Bagel seasoning: you can find โ€˜everything but the bagel seasoningโ€™ at most grocery stores but it was popularized by Trader Joeโ€™s.

Chili crunch or hot honey: chili crunch is a crunchy, spicy, garlicky oil that adds a delicious layer of flavor and texture. You can also get chili crunch honey or hot honey which adds a sweet and spicy layer.

How to make:

Heat a ceramic-coated nonstick pan over medium heat and spray with cooking spray. Spread mayo evenly on both sides of the bread. Toast the bread in the pan until golden brown, about 3-4 minutes per side.

Mash avocado with a fork on a cutting board or in a small bowl. Spritz it with lemon and season with salt. Spread mashed avocado on the toast. Crumble on the feta, bacon and green onion. Drizzle with hot honey and sprinkle with bagel seasoning and black pepper.

Variation ideas:

  • Add an egg! Poached egg, fried egg, scrambled egg, egg whites or hard-boiled egg are all so yummy and a great way to boost the protein in this easy breakfast.
  • Switch up the cheese. I love any and all types of cheese on avocado toast. Smear some whipped cream cheese or Boursin cheese underneath the avocado layer or sprinkle sharp cheddar or goat cheese on top.
  • Make it on a hashbrown patty! Instead of a slice of sourdough, this bacon avocado mixture is amazing on an air-fried hashbrown patty.

FAQs

How do you cook your bacon?

I always bake my bacon. Line a broiler pan (or regular baking sheet) with aluminum foil for easy cleanup and line up bacon slices on the pan. Bake at 350 degrees for 28-32 minutes, until crispy and cooked to your liking.ย 

What type of bread should I use?

This is really up to you and your taste preferences but I prefer 1) sourdough or whole grain sourdough and 2) a loaf that you have to slice from (as opposed to pre-sliced).

How can I make this vegetarian?

Swap out the bacon for an egg! Or simply bulk up the veggies and add thinly sliced radish, red onion and microgreens.

What should I do with the other half of my avocado?

I wrap the remaining half with plastic wrap and keep it in my crisper drawer on low humidity. Avocado doesnโ€™t last long in my house because Iโ€™ll be making this bacon avocado toast again the next morning!

Ingredients
