Description
I eat some iteration of avocado toast nearly daily and I hope this recipe convinces you to do the same!
Ingredients
- 1 slice sourdough bread
- 1 tablespoon mayo
- 1/2 avocado
- Spritz of lemon
- Pinch of salt
- 1 green onion, sliced
- 1/2 oz feta, crumbled
- 1 slice cooked bacon, chopped (see note)
- Hot honey
- Bagel seasoning
Instructions
Heat a ceramic-coated nonstick pan over medium high heat and spray with cooking spray. Spread mayo evenly on both sides of the bread. Toast the bread in the pan until golden brown, about 3-4 minutes per side.
Smash the avocado with a fork. Spritz it with lemon and season with salt. Spread avocado on the toast. Crumble on the feta, bacon and green onion. Drizzle with hot honey and sprinkle with bagel seasoning. Cry sweet happy breakfast tears because it’s a good morning.
Notes
Bacon: I always bake my bacon. Line a broiler pan (or regular sheet pan) with aluminum foil for easy cleanup and line up bacon slices on the pan. Bake at 350 degrees for 28-32 minutes, until crispy and cooked to your liking.
This recipe is very easy to scale up or down depending on how many slices you want to make!
