With an extra boost of protein, this avocado toast with cottage cheese is a balanced way to start the day! My favorite avocado toast features good quality sourdough bread, creamy avocado, eggs any way you like and this time- a dollop of cottage cheese to make things even more satisfying!

If you follow me on Instagram, you already know this. My favorite breakfast is avocado toast. I have shared this no less than 10294728 times on the internet.

For many years, I was a sweet gal for breakfast (oatmeal, yogurt, muffins, etc) but ever since my first baby, I have been obsessed with avocado toast. I think itโ€™s because in those early post-partum days I was so tired and so HUNGRY from breastfeeding that I was craving a truly balanced and satisfying breakfast. The combo of eggs + avocado + bread just hits every single time, ya know what Iโ€™m sayinโ€™!?

These past few weeks, Iโ€™ve been adding a big dollop of cottage cheese to my usual avocado toast and I LOVE IT. Cottage cheese can sometimes get a bad rap for its texture, but Iโ€™m personally a big cottage cheese fan. If you donโ€™t like cottage cheese, you may find that you donโ€™t mind it in this situation. There are other flavors and textures that make it delicious, not like spooning straight cottage cheese into your mouth.

Why Iโ€™m obsessed with cottage cheese avocado toast:

  1. Itโ€™s an easy breakfast with simple ingredients that I almost always have on hand.
  2. This avocado toast clocks in at a whopping 30 grams of protein. That is a great way to get a headstart on your daily protein needs!
  3. Avocado toast with cottage cheese is not only high in protein but itโ€™s an overall great balance of macronutrients: satisfying carbohydrates from bread, healthy fats from avocado and protein from eggs and cottage cheese. Meals like this one can help maintain steady blood sugar throughout the morning and give you lots of energy for your busy day!
  4. Snag some added health benefits by piling on whatever fresh veggies you love. I like microgreens, green onions, and pickled radishes or red onion if I have them.
  5. And last but not least, this. recipe. is. delicious. The sourdoughโ€™s crunchy and chewy texture, the creamy cottage cheese, perfectly medium-boiled egg, muah! So good.

What Youโ€™ll Need to Make Avocado Toast with Cottage Cheese:

Bread: my preference is sourdough bread but you can use whole wheat bread, white bread, gluten-free bread, whatever you prefer. I usually buy the unsliced sourdough from the bakery, I find that it stays fresher longer than the pre-sliced kind.

Olive oil or mayo: toasting the bread in a swish of olive oil instead of the toaster makes all the difference, trust me.

Avocado: buy firm, green, fresh avocados and allow them to ripen on your own counter. This is how I get the perfect avocado every time!

Cottage cheese: I love Good Culture cottage cheese, it has awesome flavor and texture. I generally go for whole milk cottage cheese because the difference in nutrition and calories is negligible and the flavor is superior. BUT you can absolutely use low-fat cottage cheese or fat-free cottage cheese if that is what you like.

Eggs: eggs are another important protein component of this breakfast. I like the brand Happy Egg, the yolks are always so beautiful and flavorful.

Veggies: add some green in there! I love microgreens and green onions- both of which you can find in the produce department at most grocery stores. Red onion, radishes, fresh tomatoes or other fresh herbs are also great options.

Seasonings: I like to use chili crunch seasoning (from Trader Joeโ€™s) and a drizzle of honey. You can use everything but the bagel seasoning, green goddess seasoning, a pinch of red pepper flakes, flaky salt, drizzle of balsamic glaze or hot honey, etc. Youโ€™ll also need salt and black pepper for your eggs!

How to Make Avocado Cottage Cheese Toast:

Heat a stainless steel over medium heat and add a swish of olive oil. Add your bread of choice, tossing it so itโ€™s coated in a bit of olive oil on each side. Alternatively, you can spread mayo on both sides and use nonstick spray instead of oil. Fry bread for 1-2 minutes per side, until golden brown and toasted.

Smash up your avocado with a squeeze of lemon or lime juice and a pinch of sea salt.

Prepare eggs per your preference. I โ€˜hard-boiledโ€™ the eggs pictured here in my air fryer! If you have an air fryer, simply add eggs to your air fryer basket and air fry at 250 degrees for 15 minutes (medium-boiled) to 18 minutes (hard boiled). Plunge them into a bowl of cold water to shock the egg away from its shell to make it easier to peel. Season eggs with a pinch of salt and pepper.

Spread the avocado mash on your piece of toast, followed by the cottage cheese, then eggs. Garnish with green onions, microgreens, chili crunch seasoning or bagel seasoning and a drizzle of honey.

Variation Ideas

  • If the cottage cheese texture bothers you but you want the benefit of added protein, try blending the cottage cheese until smooth.
  • Other optional toppings: sunflower seeds or pepitas, pickled red onion, tomato slices, lemon zest, fresh cilantro or parsley, hot sauce, a dollop of pesto, or drizzle of balsamic glaze
  • Use whole grain bread for a boost of fiber!

FAQs

What type of bread is best?

I personally feel strongly that bread you have to slice yourself is the best for avocado toast. Most pre-sliced varieties are not as thick, chewy or hearty and donโ€™t toast up as perfectly as my high-maintenance self prefers. However, ultimately, itโ€™s up to you and you should use your favorite bread!

How do I keep the toast from getting soggy?

The bread will get soggy if you leave the avocado toast for too long, so I definitely recommend eating right away. Unfortunately, this isnโ€™t a great meal prep breakfast.

How did you make the eggs in your pictures?

In my air fryer, did you know you could do that?! Place eggs in the air fryer at 250 degrees for 15-18 minutes. I like mine on the more medium side and I do 15 minutes, but for a more hard-boiled yolk, go for 18 minutes. Then place the eggs in an ice water bath and peel.

Where do you find chili crunch seasoning?

This chili crunch seasoning is from Trader Joeโ€™s, but many regular grocery stores carry seasoning blends that are comparable, if you donโ€™t have access to Trader Joeโ€™s.

What should I do with my other half avocado?

I wrap my leftover avocado tightly in a small piece of plastic wrap and store in the crisper drawer of the fridge. It only has to last one day until I make this again! ๐Ÿ˜‰ Donโ€™t worry about any browning; the avocado is still good, even if the surface browns a little bit. If it bothers you, simply scrape the brown layer off with a spoon and use the rest.
