My favorite breakfast is avocado toast.

If you follow me on Instagram, you already know this. I have shared this no less than 10294728 times on the internet.

For many years, I was a sweet gal for breakfast (oatmeal, yogurt, muffins, etc), but ever since my first baby, I have been obsessed with avocado toast. I think it’s because in those early postpartum days I was so tired and so HUNGRY from breastfeeding that I was craving a truly balanced and satisfying breakfast. The combo of eggs + avocado + bread just hits every single time, ya know what I’m sayin’!?

At some point, I started adding a big dollop of cottage cheese to my usual avocado toast and I LOVE IT. Cottage cheese can sometimes get a bad rap for its texture, but I’m personally a big cottage cheese fan. And if you don’t usually love cottage cheese, you still might like it here. There are so many other flavors and textures going on with the avocado toast, egg, and toppings, so it doesn’t feel like you’re just eating a spoonful of cottage cheese.

Why I’m obsessed with cottage cheese avocado toast:

  1. It’s an easy breakfast with simple ingredients that I almost always have on hand.
  2. It clocks in at a whopping 30 grams of protein, which is a great way to get a head start on your daily protein needs!
  3. It’s not only high in protein but it’s an overall great balance of macronutrients: satisfying carbohydrates from bread, healthy fats from avocado, and protein from eggs and cottage cheese. This can help maintain steady blood sugar throughout the morning and give you lots of energy for your busy day!
  4. You can easily pile on whatever fresh veggies you love for some added health benefits. I like microgreens, green onions, and pickled red onions or radishes if I have them.
  5. And last but not least, this. recipe. is. delicious. The sourdough’s crunchy and chewy texture, the creamy cottage cheese, perfectly medium-boiled egg, muah! So good.

What You’ll Need to Make Avocado Toast with Cottage Cheese:

Ingredients for recipe including sourdough bread, avocado, eggs, cottage cheese, microgreens, green onions, lemon, honey, olive oil, and chili crunch seasoning.
  • For bread, my preference is sourdough, but you can use whole wheat bread, white bread, gluten-free bread, whatever you prefer. I usually buy the unsliced sourdough from the bakery because I find that it stays fresher longer than the pre-sliced kind.
  • Toasting the bread in a swish of olive oil (or mayo) on a pan instead of the toaster makes all the difference, trust me.
  • Buy firm, green, fresh avocados and allow them to ripen on your counter. This is how I get the perfect avocado every time! If they’re ripe before you’re ready to use them, pop them in the fridge to buy yourself a few extra days.
  • I love to use Good Culture cottage cheese for the flavor and texture. I generally go for whole milk cottage cheese because the nutrition difference is pretty small, and it tastes so much better. BUT you can absolutely use low-fat cottage cheese or fat-free cottage cheese if that is what you prefer.
  • Eggs are another important protein component of this breakfast. I like the brand Happy Egg because the yolks are always so beautiful and flavorful.
  • Don’t forget to add some veggies in there to balance things out! I love microgreens and green onions – both of which you can find in the produce section at most grocery stores. Red onion, radishes, cherry tomatoes, or other fresh herbs are also great options.
  • In terms of seasonings, I like to use chili crunch seasoning (from Trader Joe’s) and a drizzle of honey. You can also use everything but the bagel seasoning, green goddess seasoning, a pinch of red pepper flakes, flaky salt, a drizzle of balsamic glaze or hot honey, etc.

How to Make Avocado Cottage Cheese Toast:

Start by pan-toasting your bread of choice in a little olive oil over medium heat until golden and crisp on both sides. This gives the toast way more flavor and texture than a regular toaster situation.

While the bread toasts, mash your avocado with lemon juice (or lime juice) and a pinch of sea salt. Then prep your eggs however you like them. I used air fryer boiled eggs here, but fried, poached, or scrambled eggs all work.

Spread the avocado mash onto your piece of toast, add cottage cheese, then layer on the eggs. Finish with green onions, microgreens, chili crunch or bagel seasoning, and a drizzle of honey.

OOMPH. So good.

Variation Ideas

  • If the cottage cheese texture bothers you but you want the high-protein benefit, try blending the cottage cheese until smooth.
  • Other optional toppings: sunflower seeds or pepitas, pickled red onion, tomato slices, lemon zest, fresh cilantro or parsley, hot sauce, a dollop of pesto, or drizzle of balsamic glaze.
  • Use whole grain bread for a boost of fiber!

FAQs

What type of bread is best?

I feel strongly that bread you have to slice yourself is the best kind for avocado toast. Most pre-sliced varieties are not as thick, chewy or hearty and don’t toast up as perfectly as my high-maintenance self prefers. However, ultimately, it’s up to you and you should use your favorite bread!

How do I keep the toast from getting soggy?

The bread will get soggy if you leave the avocado toast for too long, so I definitely recommend eating right away. Unfortunately, this isn’t a great meal prep breakfast.

How did you make the eggs in your pictures?

In my air fryer, did you know you could do that?! Here’s how: place eggs in the air fryer at 250ºF for 15-18 minutes. I do 15 minutes because I like mine on the more medium side, but for a hard-boiled yolk, go for 18 minutes. Then place the eggs in a cold water bath and peel.

Where do you find chili crunch seasoning?

This chili crunch seasoning is from Trader Joe’s, but many regular grocery stores carry seasoning blends that are comparable if you don’t have access to Trader Joe’s.

How do you store the unused half of the avocado?

I wrap my leftover avocado tightly in a small piece of plastic wrap and store in the crisper drawer of the fridge. It only has to last one day until I make this again! 😉 Don’t worry about any browning; the avocado is still good, even if the surface browns a little bit. If it bothers you, simply scrape the brown layer off with a spoon and use the rest.

Description

Filling, nutritious and delicious, this avocado toast with cottage cheese can be a quick, high-protein breakfast, lunch OR dinner! There are no rules.


Ingredients

  • 1 slice sourdough bread

  • swish of olive oil, for toasting

  • 1/2 avocado, smashed with a squeeze of lime or lemon and sprinkle of salt

  • 1/3 cup cottage cheese

  • 2 eggs, prepared however you like them-fried, poached, scrambled, hard-boiled

  • Toppings: microgreens, green onions, thinly sliced tomatoes, pickled red onions, chili crunch or bagel seasoning, flaky sea salt, balsamic glaze, drizzle of honey


Instructions

  1. Heat a stainless steel over medium heat and add a swish of olive oil. Add your slice of bread, tossing it so it’s coated in a bit of olive oil on each side. Alternatively, you can spread mayo on both sides and use nonstick spray instead of oil. Fry bread for 1-2 minutes per side, until golden brown and toasted.
  2. Smash up your avocado with a squeeze of lemon or lime and a big pinch of salt.
  3. Prepare eggs per your preference. I ‘hard-boiled’ the eggs pictured here in my air fryer! If you have an air fryer, simply add eggs to your air fryer basket and air fry at 250 degrees for 15 minutes (medium-boiled) to 18 minutes (hard boiled). Plunge them into a bowl of ice water to shock the egg away from its shell to make it easier to peel. Season eggs with a pinch of salt and pepper.
  4. Spread the avocado mash on your toasted bread, followed by the cottage cheese, then eggs. Garnish with green onions, microgreens, chili crunch seasoning or bagel seasoning and a drizzle of honey. OOMPH. It is just the best.
