Iโ€™ve been in my matcha girlie era for a while now (I WAS the clichรฉ that fell hard for matcha in 2020 lol), but this raspberry version? Next level. I made it on a whim one afternoon with a rogue container of raspberries I didnโ€™t want to waste, and suddenly it was my new summer drink obsession. Itโ€™s tart, sweet, earthy, and creamy all at once, and I meanโ€ฆ she cute right? A homemade iced matcha latte that gives main character energy? We love to see it.

If youโ€™re new to matcha, this is a super approachable way to ease in. And if youโ€™re already a fan, itโ€™s a fun way to mix it up, literally and visually.

What is matcha?

Matcha is a powdered green tea made from finely ground, shade-grown tea leaves. It has a vibrant green color, earthy flavor, and is rich in antioxidants and caffeine.

Does matcha tea have health benefits?

Matcha is rich in antioxidants, particularly EGCG, which may help reduce inflammation and protect against chronic diseases. It also contains L-theanine, an amino acid that promotes relaxation and enhances focus, working synergistically with caffeine to provide sustained energy without the jitters. (source) As a registered dietitian, I definitely recommend drinking green tea daily! Regular green tea or matcha green tea, both are fabulous and a part of my daily diet.

What is the difference between ceremonial and culinary grade matcha?

Ceremonial grade matcha is made from the youngest tea leaves and has a smooth, delicate flavor which is the best for drinking. Culinary grade is slightly more bitter and is ideal for cooking or baking.

What Youโ€™ll Need to Make an Iced Raspberry Matcha Latte

Raspberries: I used fresh raspberries, but you can also use frozen. Weโ€™re cooking them down into a quick raspberry syrup thatโ€™s sweet, tangy, and jammy.

Honey: Used to lightly sweeten the raspberry layer. Maple syrup or agave could work too.

Matcha: Go for ceremonial grade if you can, this gives a vibrant color and smooth taste without bitterness. I love this one.

Water: Warm, not hot! This helps whisk the matcha without burning it or making it taste bitter.

Oat milk: I love the creamy texture of oat milk here, it plays beautifully with the matcha and raspberry. You can use any type of milk you love.

Ice: For layering and keeping everything chilled. Crushed ice or ice cubes, your call.

Variation Ideas and Tips

  • Swap oat milk for dairy, soy, almond milk or coconut milk if thatโ€™s what you have. Just keep in mind that a lower fat milk will be less creamy.
  • Make the raspberry sauce with blueberries or strawberries.
  • For a delicious shortcut, use raspberry jam, strawberry jam, or really any fruity flavor of jam, instead of the sauce.
  • Pour the oat milk over the back of a spoon to preserve the aesthetic layers.

How to Make a Raspberry Matcha Iced Latte

Simmer raspberries and honey in a small saucepan over medium-low heat until jammy and broken down. Mash them with the back of a spoon or potato masher, then strain out the seeds if desired.

Whisk matcha with warm water in a small bowl using a matcha whisk in a zigzag motion until smooth and frothy. Froth your oat milk using a milk frother or by shaking in a jar.

Fill a tall glass with ice. Spoon in a few tablespoons of raspberry sauce, pour in the oat milk (over the back of a spoon if you want clean layers), then finish with the matcha.

Sip, stir, and admire your cafรฉ-worthy creation.

FAQs

Can I use frozen raspberries?

Yes! Just simmer them straight from frozen, no need to thaw. The water content will be a little higher, so your syrup may take an extra minute to reduce.

Do I need a matcha whisk?

A matcha whisk gives the best results, but a small milk frother, blender bottle or even a mason jar with lid can work in a pinch. Just make sure the matcha is fully dissolved, nobody wants clumps.

Can I make this hot?

Totally. Skip the ice and warm your oat milk before layering.

How much caffeine is in this?

It depends on the matcha you use, but two teaspoons of matcha powder generally contain about 140-160 mg of caffeine, roughly the same as a strong cup of coffee.

How do I make this sugar-free?

Use monk fruit or another sugar-free sweetener in place of honey. Adjust to taste, since some are sweeter than others.

Description

This refreshing raspberry matcha latte combines creamy oat milk, vibrant green tea, and a homemade raspberry syrup for a fruity, antioxidant-rich iced drink thatโ€™s as pretty as it is delicious.

  • 1 cup raspberries
  • 1/2 cup honey
  • 2 teaspoons matcha
  • 3 tablespoons water
  • 3/4โ€“1 cup oat milk


Instructions

  1. Raspberry muddle: In a small saucepan, combine the raspberries and honey over medium-low heat. Mash the recipes with a potato masher or the back of a fork. The raspberries will release water and start to break down. Simmer for 4-5 minutes and then remove from heat. The sauce will thicken as it cools. Pass the mixture through a fine-mesh sieve to remove the raspberry seeds. I like a seedy raspberry sauce so I actually keep some in mine, up to you!
  2. Matcha: Measure 2 teaspoons matcha into a bowl and add 3 tablespoons of warm, but not hot!, water to the matcha. Use a matcha whisk, working in a zigzag motion to whisk and dissolve the matcha into the water.
  3. Milk: If you have one, I strongly recommend frothing the oat milk on a cold setting. You can do this with a machine like the Nespresso aeroccino or just a handheld frother.
  4. Assemble it: Fill a tall glass with ice. Add two tablespoons raspberry sauce, followed by the oat milk and then matcha. Pouring the milk over the back of a spoon helps preserve the pretty layers, because we need the #aestheticvibes amirite?
  5. Youโ€™re done! Go kick your feet up and relax, you deserve this.

Youโ€™ll have enough raspberry sauce for 3-4 lattes, yay you! Store leftover sauce in the fridge for up to a week.
