Perfect Pickled Red Onions
You guys! Seriously I’m so stoked about these pickled red onions. They are the BEST. Add them to everything- salads, tacos, scrambled eggs, chipotle bowls, sandwiches, wraps, pizzas, ice cream…

Jk jk (about the ice cream only). You really do need a jar of these in your fridge at all times. They are so simple to prep and the perfect addition to so many meals. These will last up to 4 weeks sealed in a jar in your fridge.

Did I mention easy? Just slice like so, whisk together some apple cider vinegar, sugar, salt and water and pour over sliced onion. You can of course add some fun flavor add-ins like peppercorns, garlic cloves, red pepper flakes, cumin seeds or allspice berries if you want to be fancy.

And the best part? I bet you already have these ingredients in your pantry! So an easy cooking hack using pantry staples to give your dinner that pop of tangy, bright, slightly sweet, slightly salty flavah!

Description
Add these bright, tangy onions to avocado toast, salads, tacos, sandwiches, soup, pizza, wraps or scrambled eggs- the opportunities are endless!
Ingredients
- 1 medium red onion, sliced (see picture and notes)
- 1 cup organic apple cider vinegar
- 1/2 cup water
- 2 tablespoons sugar
- 1 1/2 teaspoons kosher salt
- 2 peeled garlic cloves
- Optional add-ins: pinch of red pepper flakes, whole small chili pepper, teaspoon allspice berries, teaspoon whole cumin seeds or teaspoon black peppercorns
Instructions
- In saucepan over medium heat combine the vinegar, water, sugar and salt and whisk until the sugar and salt are completely dissolved. You can also do this in the microwave, just zap for about 45-60 seconds, then whisk.
- Place onion slices, peeled garlic cloves and add-ins of choice in a large glass jar or sealable glass container. Pour on the warm vinegar mixture, making sure all onions are fully submerged. Let sit at room temperature for 30 minutes before serving. Or then transfer to fridge and store, tightly sealed, for up to 3-4 weeks.
Notes
Slice the onion in half, make a cut down the middle (parallel to lines on the onion) almost to the root end and then make thin slices, perpendicular to onion grooves, moving towards the root. This makes the perfect condiment-sized slices.
