I make a lot of vinaigrettes, but this one has been on repeat this summer. Itโ€™s the kind of dressing that is good on anything and everything. Iโ€™ve been especially loving it on some type of dense bean salad situation, that I can eat throughout the week for lunches. You can also drizzle it over green salads, pasta salad, rice bowls, grilled proteins or cooked veggies. The base is my go-to classic vinaigrette combo and then the fresh dill and garlic add flavors that punch you in the face in the best way. ๐Ÿ˜‡ Simple method, simple ingredients, fresh flavor, you have no excuses, letโ€™s make it!

What Youโ€™ll Need to Make Mustard Dill Dressing

Extra virgin olive oil: Use a high-quality extra virgin olive oil, I like the Kirkland one from Costco! You could also use a more neutral oil like avocado oil or vegetable oil but I love the flavor and nutrients in olive oil!

Dijon mustard: Dijon adds flavor and helps emulsify the dressing so it stays nice and creamy.

Red wine vinegar: For bright, balanced acidity. You could also use white wine vinegar, white balsamic vinegar, apple cider vinegar or fresh lemon juice.

Honey: Sweet honey mellows the tang of the vinegar and mustard and creates a balanced dressing. You can sub agave nectar, maple syrup or cane sugar.

Garlic paste: Iโ€™ve been obsessed with the prepared garlic paste from the produce section as a shortcut for fresh garlic, but you can use either!

Fresh dill: Dill is the star of the show here, its distinct flavor pairs well with mustard.

Salt and pepper: Kosher salt and fresh cracked pepper to lift the overall flavor of the dressing.

How to Make Mustard Dill Dressing

Add all ingredients to a small bowl, mason jar or salad shaker.

Shake or whisk vigorously until the dressing is smooth and emulsified.

Taste and adjust as needed, more salt and pepper for flavor, honey for sweetness, vinegar for tang, chopped dill for herbaceousness, etc.

If youโ€™d like it even smoother, you can use a blender or food processor.

Can I use dried dill instead of fresh?

Fresh dill really makes the flavor pop, but dried dill has the same vibe. You can substitute one teaspoon dried dill weed.ย 

How should I store mustard dill sauce?

Store in a sealed jar or airtight container in the fridge for up to 5 days. Give it a good shake before each use.

Could I use a different herb?

Variation thoughts: you could essentially use any fresh herbs you love. The base of this dressing is extremely customizable. You could also add a pinch of red pepper flakes for a kick, sub whole grain mustard for the dijon, swap honey for agave to make it vegan, etc.
