Juicy Sweet Chili Ground Chicken Burgers with Sesame Slaw
These ground chicken burgers are juicy, herb-packed, and anything but the dry, bland chicken burgers you may have had before. Cooked until golden, the patties are brushed with a sticky sweet chili sauce, then topped with crunchy sesame slaw and a creamy bang bang sauce. They are what I consider fusion food at its finest! An easy 25-minute meal that works just as well for a quick weeknight dinner as it does for feeding a group.

Listen y’all, this may be my favorite recipe I’ve ever created with ground chicken. Top three at least. I have eaten many sad chicken burgers, turkey burgers, and veggie burgers in my disordered eating days and never again. 🙅🏻♀️
The inspo for these is this recipe for bang bang shrimp and slaw that I’ve made for years. But I wanted it in sandwich format. Think: herb-forward sweet chili chicken burger, toasted sesame and lime slaw and of course, a big ole swoosh of bang bang sauce. Man, if you’ve never combined mayo + sweet chili sauce + sriracha… prepare to have your mind blown.
Ground chicken burgers are notoriously dry because chicken is so lean, but just a touch of mayo and sweet chili sauce keeps these burgers moist and flavorful.
Some people are going to get mad at me for calling them burgers… okay okay chicken PATTIES. Whatever, they’re amazing. And you should put them on the meal plan asappppp.
For my girls, I served the chicken patty with cheese on a bun and the slaw and avocado slices on the side. They gobbled it right up! We also had ours with sweet potato fries (we love the kind from Trader Joe’s!).

A Few Thoughts on What You’ll Need for These Chicken Burgers:

- Ground chicken is super lean, which is why it can so easily turn out dry. Adding a little mayo and sweet chili sauce directly into the mixture keeps these burgers juicy and flavorful.
- I use panko breadcrumbs to keep the texture light but still hold everything together. Regular breadcrumbs will work, but may give a more dense bite.
- Garlic and fresh ginger add that punchy, savory depth that pairs really well with the sweet chili sauce. I love using garlic or ginger paste as a shortcut, but freshly grated works great if you have it.
- Sweet chili sauce adds a little sweetness and heat to the burgers themselves, and brushing a little extra on the outside at the end gives you that sticky, caramelized finish. You can usually find it in the international aisle near other Asian condiments.
- For the slaw, a mix of green cabbage, purple cabbage, and shredded carrots gives you that crunchy texture and color. You can grab a bagged coleslaw mix to save time if you want.
How to Make Sweet Chili Ground Chicken Burgers:
Start by mixing together the ground chicken, panko breadcrumbs, basil, green onions, sweet chili sauce, sriracha, mayo, garlic, ginger, lime zest, and seasonings until everything is just combined. Try not to overwork the mixture here so the burgers stay tender.


Form into four even patties and let them chill in the fridge (or freezer) for about 15 minutes to help them firm up. When you’re ready to cook, heat a large skillet over medium heat with a little oil. Add the patties and cook until golden brown on both sides. Brush the burgers with a little extra sweet chili sauce.


While the patties are chilling, toss together the slaw ingredients: cabbage, carrots, serrano pepper, sesame oil, lime juice, and a pinch of salt.


In a small bowl, stir together the mayo, sweet chili sauce, and sriracha until smooth and creamy for the bang bang sauce. You can adjust the sriracha here depending on how much heat you want.


For serving, I like to butter the buns and toast them in the oven until golden. Add a generous swoop of bang bang sauce, then layer on the chicken burger, sliced avocado, and a big pile of slaw.


Yeah… these are 100% going into the regular dinner rotation over here.
FAQs
Yes! You can make the slaw a few hours ahead and keep it in the fridge. It will soften slightly as it sits, but still keeps a nice crunch.
Sweet potato fries, regular fries, a simple caprese salad, or even extra slaw all work really well here.
Swap the panko breadcrumbs for gluten-free breadcrumbs and use gluten-free buns (or serve the patties lettuce-wrapped). Double-check that your sweet chili sauce doesn’t contain gluten.
Yup! You can easily sub ground turkey (or ground pork) with very comparable results.

Burgers
- 1 lb ground chicken
- 1/2 cup panko breadcrumbs
- 3 tablespoons fresh basil, finely chopped
- 3 tablespoons green onions, thinly sliced
- 1 tablespoon sweet chili sauce + more for brushing
- 1–2 teaspoons sriracha, optional
- 1 1/2 tablespoons mayo
- 3 cloves garlic, minced or 2 teaspoons garlic paste
- 2 teaspoons grated fresh ginger or ginger paste
- 1 teaspoon lime zest
- 1 teaspoon kosher salt
- pinch of freshly ground black pepper
- avocado oil, for pan-frying
Slaw
- 2 cups green cabbage, finely shredded
- 1 cup purple cabbage, finely shredded
- 1 cup carrots, shredded
- 1 serrano or jalapeño pepper, thinly sliced
- 2 teaspoons toasted sesame oil
- 1 tablespoon sweet chili sauce
- 1 tablespoon lime juice (juice of 1/2 lime)
- pinch of salt
Bang Bang sauce
- 1/3 cup mayo
- 1 teaspoon sriracha (2 if you like spicy)
- 1 tablespoon sweet chili sauce
Assembly
- buns, toasted
- avocado, sliced
Instructions
- Chicken burgers part one: Place a piece of parchment paper on a large plate. In a mixing bowl, use your hands to mix together all of the chicken burger ingredients: 1lb ground chicken, ½ cup panko, 3 tablespoons each fresh basil and green onions, 1 tablespoon sweet chili sauce, 1-2 teaspoons sriracha, 1 ½ tablespoons mayo, 3 cloves minced garlic, 2 teaspoons grated fresh ginger, 1 teaspoon lime zest, 1 teaspoon kosher salt and pinch of black pepper. Form into four equal patties, place on the lined plate and refrigerate (or freeze) for 15 minutes to firm up while you prep the other components.
- Slaw: Toss together 2 cups green cabbage, 1 cup purple cabbage, 1 cup shredded carrots, 1 thinly sliced serrano pepper, 2 teaspoons toasted sesame oil, 1 tablespoon sweet chili sauce and 1 tablespoon lime juice until everything is well combined. Season with a pinch of salt, per your taste.
- Bang Bang Sauce: In a small bowl, whisk together ⅓ cup mayo, 1 teaspoon sriracha and 1 tablespoon sweet chili sauce.
- Chicken burgers part two: Add a swish of oil to a large ceramic-coated nonstick skillet over medium heat. Cook the burgers for 5 minutes per side, until a golden brown crust has developed on the exterior and the internal temperature reaches 165°F. Brush the outsides with a little extra sweet chili sauce. If you don’t have a large enough skillet, you may want to cook them in two batches.
- Assembly: Toast the buns. I like to butter mine and bake at 400°F for about 10 minutes until golden brown. Add a thick swoop of Bang Bang sauce to both halves of the bun. Layer chicken patty, avocado slices and slaw on the bottom half and finish with the top piece. OH MY GOODNESS. I’m excited for you, this is a grand dinner moment.
Notes
Air fryer instructions: Preheat air fryer to 390°F. Spray the basket of your air fryer with nonstick spray. Air fry the chicken patties for 5 minutes, flip and cook another 5 minutes. Brush with sweet chili sauce. You may have to work in two batches so you don’t overcrowd the basket.
Grill instructions: Preheat the grill to medium-high. Make sure the grill grates are really well oiled and grill the chicken burgers for 5 minutes per side. Brush with sweet chili sauce.
