What I Eat in a Day
Yes, I’m a registered dietitian. And yes, I love to lead a healthy lifestyle. But you might be surprised to discover that healthy for me means 1) eating ENOUGH, 2) listening to my body, and 3) even including foods like sweets, bread and bacon. I was pretty scarred by the diet culture of the 1990s and 2000s and that led me to have a very unhealthy relationship with food. Back then I was surviving, now I care about THRIVING.
So here’s an example of what I eat in a day as a dietitian who has found food freedom and body acceptance! Because for me, it’s about being #healthynothungry.
Breakfast
This is my number one, best ever, most-frequently consumed breakfast. Avocado toast. It was a real bonus this morning because I had a piece of baked bacon leftover from the weekend. I top my avocado toast with two eggs, feta cheese, green onions and green goddess seasoning. Paired with some fresh fruit and a Nespresso with oat milk. I’ve also been adding a scoop of collagen peptides to my coffee for an extra 10g protein. It is totally tasteless and I love the boost of protein. This breakfast slaps every.single.time. It is the perfect combination of protein, satisfying carbohydrates, filling fiber, healthy fats and micronutrients.

Morning Snack
I generally don’t snack between breakfast and lunch but this morning I was testing a banana muffin recipe and had to QC it obvi. These banana muffins are so simple and SO GOOD!

Lunch
Lunch was gloriously easy thanks to leftovers! I forgot to snap a picture, but this is my dinner picture from the night before. I had leftover Sweet Chili Salmon and Spring Pea Salad with Fresh Mint Dressing. No garlic bread with my leftovers, because when is there ever leftover garlic bread. Ugh, I can’t get over this salad– it is BEYOND good.

Afternoon Snack
I spent the afternoon working at my computer and got a bit hungry. I don’t always eat a snack between meals but I listen to my body and if I know it’s going to be a while before dinner, I try to eat a little something to tide me over. Grapes and string cheese did the trick!

Dinner
Dinner was two of these incredible Baja Shrimp Tacos. I marinated and threw the shrimp and veggies on the grill, made a creamy chipotle slaw, sliced an avocado and muah! Balanced, nutritious and marvelously flavorful. This is my less pretty phone pic and a great example of blog vs real life lol.

Dessert
Went for a walk with Griffin and came back craving something sweet. I didn’t have a batch of my Chocolate Covered Dates made so this is my shortcut version. Two medjool dates with peanut butter, a few peanuts and chocolate chunks. Paired with peppermint tea. Totally hit the spot.

And that’s a wrap! It was a delicious day of eats. I don’t count calories or macros. But I do like to eat the rainbow, prioritize fiber and protein, and stay very physically active. Remember that these are just for fun and not to tell you what or how you should be eating.
