Say hello to my number one favorite summer salad.

Isn’t she a beaut!?

With every single mouthful there is a punch of juicy sweetness from the watermelon, saltiness from the feta, crunchiness from the pistachios, bitterness from the arugula and tangy brightness from the vinegar. It really is just all the things.

I enjoy this salad for lunch on the regular or as a yummy side dish with protein and a grain for dinner! I hope you enjoy this one as much as we do.

Watermelon & Arugula Salad with Balsamic Vinaigrette

Description

Watermelon, arugula, feta, pistachios and balsamic pair wonderfully to bring a bright punch of flavor and nutrition. You will want this as your lunch salad every day!


Ingredients

Scale

Salad

2 cups butter lettuce, chopped

2 cups arugula

1 cup watermelon, cubed

1/4 cup pistachios, chopped

1 oz feta, crumbled

Dressing

1 teaspoon dijon mustard

1 teaspoon agave syrup

2 tablespoons good quality balsamic vinegar

1/4 cup extra virgin olive oil

1/4 teaspoon each kosher salt and fresh cracked pepper


Instructions

Salad

Place butter lettuce and arugula in a large bowl. Drizzle with half the dressing and toss gently to combine. Top with watermelon, feta and pistachios. Drizzle with additional dressing, as desired. Sprinkle with flaky sea salt if you’re extra like that.

Dressing

Vigorously shake together all ingredients in a jar until well emulsified.


Notes

Versatility: this salad is amazingly versatile. Try cherries or strawberries instead of watermelon, goat cheese instead of feta, spinach or kale instead of arugula or pecans instead of pistachios! Make it your own!

Make it nut-free: choose pumpkin or sunflower seeds instead of pistachios

Make it dairy-free: leave off the feta or replace with a crumbly cashew-cheese substitute
