Spicy Vodka Pasta with Italian Sausage
This spicy vodka pasta is creamy, rich, beautifully balanced and tastes way fancier than the effort it takes to make. Orecchiette gets tossed in a silky tomato vodka sauce with Parmesan and Italian sausage for a quick, cozy dinner that comes together in about 25 minutes. It’s easy enough for a weeknight but impressive enough to serve for an at-home date night or dinner with friends.

The pasta that lives up to the hype.
I’ll be honest, I never saw the original viral Gigi Hadid pasta video back in 2020. Actually, I think it was an Instagram story. But I did see everyone on social media go absolutely bonkers over it. The supermodel Gigi Hadid of course did not invent pasta alla vodka, but she definitely helped make it popular again, and for good reason. It. is. so. good.
You’ll find variations of Gigi Hadid’s spicy vodka pasta all over the internet and TikTok, but this is my version of the viral dish! It features a smooth sauce with a little spice from red chili flakes, orecchiette pasta and mild Italian sausage. The sausage isn’t traditional, but I love the extra flavor and protein it adds to turn it into a more balanced meal.
Add a side salad and a hunk of garlic bread and you’ll have a meal the whole family will love!

What You Need to Make Spicy Pasta Alla Vodka:

- Base of the sauce: Use extra virgin olive oil to sauté the shallot and garlic. A red onion or sweet onion would also work if that’s what you have. And I highly recommend buying fresh garlic instead of the jarred or powdered kind, but you do you boo!
- Tomato paste: Gives the vodka sauce its concentrated tomato flavor. Let it cook for 2-3 minutes until it darkens slightly before adding the vodka. I love the kind in the tube instead of the can, so I can easily store whatever I don’t use in the fridge.
- Vodka: Used to deglaze the pan (so you can scrape up all those wonderful bits stuck to the bottom) and add depth to the sauce. If you don’t have vodka, you can use dry white wine or brandy, or swap in chicken broth or vegetable broth for an alcohol-free option.
- Red pepper flakes: These are the main source of heat in this recipe. Start with a small amount of red pepper flakes for a little kick and add more if you like a lot of heat.
- For that creamy consistency: Heavy cream, butter, and Parmesan cheese make the sauce rich and silky. For the best flavor, I use a microplane to finely grate fresh Parmesan from a block. You can also use Pecorino Romano as an alternative.
- Italian sausage: I use mild Italian sausage so the red pepper flakes control the heat. It adds flavor and extra protein, but ground beef or chicken sausage would also work if you don’t eat pork. If you want to keep things vegetarian, this pasta is also delicious without meat.
- Orecchiette: This small, ear-shaped pasta is my favorite because it catches ALL that amazing creamy tomato sauce. But penne pasta, shell pasta, rigatoni, fusilli, or any short pasta shape you like will work.
How to Make this Spicy Vodka Pasta Recipe:
Cook the sausage: Heat a large skillet over medium-high heat and add the Italian sausage, breaking apart with a spatula until well-browned, about 5-7 minutes. Remove to a paper towel-lined plate.
Boil the orecchiette: Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Be sure to reserve one cup of the pasta water during the last minute of cooking before you drain the pasta.
Make the spicy vodka pasta sauce: In the same skillet you cooked the sausage, add the olive oil over medium heat. Toss in the minced shallot and garlic and sauté until softened and fragrant, about 3-5 minutes.


Add the tomato paste, salt, pepper and red pepper flakes and stir. Deglaze the pan with vodka, letting it simmer while scraping up the browned bits at the bottom of the skillet. Stir in the heavy whipping cream, Parmesan and butter until well-combined.
Add the cooked pasta and sausage to the creamy sauce and pour in the reserved cup pasta water. You can start conservatively with ½ cup and add a little water as needed until the sauce is glossy and coats the pasta.


Serve into bowls and garnish with Parmesan, cracked pepper and fresh basil. Bon appétit! 😚 🤌
FAQs
Keep leftovers in an airtight container in the fridge up to 4 days. Reheat leftovers in a large saucepan or in the microwave with a splash of water or cream to loosen the sauce. The sauce thickens quite a bit once refrigerated.
Because this pasta is so rich, I love serving it with something fresh or green to round out the meal. Try my Baty House Salad, kale and spinach salad, roasted Brussels sprouts or balsamic asparagus.
Spinach would be the easiest because you can stir it directly into the hot sauce until wilted. You could also add sautéed mushrooms or roasted broccoli.
The spiciness comes from red pepper flakes. If you cannot tolerate any amount of heat simply do not add them. As written (with ¼ teaspoon red pepper flakes) I’d give the recipe a 2/5 for spice. If you like it spicy then add lots of red pepper flakes!
Vodka sauce thickens quickly as it sits. This is why I save a full cup before draining my pasta. Stir in a splash of reserved pasta water and gradually add more until the sauce loosens up and coats the pasta again.
Yes, half-and-half will work in a pinch, although the sauce won’t be quite as rich or creamy. I wouldn’t recommend using regular milk because the sauce will be much thinner.
To make this gluten-free use certified gluten-free noodles like chickpea pasta, lentil pasta or brown rice pasta.

- 1 lb mild Italian sausage
- 8 oz orecchiette pasta
- 1 cup starchy pasta water
- For serving: more parmesan, black pepper and fresh basil leaves

- In the same skillet you cooked the sausage, add the olive over medium heat. Add the minced shallot and garlic and sauté until softened and fragrant, about 4-5 minutes.
- Add the tomato paste, salt, pepper and red pepper flakes and stir. Deglaze the pan with the vodka, letting it sizzle out while scraping up the browned bits at the bottom of the skillet.
- Stir in the cream, parmesan, and butter until well-combined. Add the pasta and sausage to the sauce and pour in reserved pasta water, starting with ½ cup and adding more as you need. I end up using the full cup, you want a glossy sauce that coats the pasta beautifully. If you don’t add enough pasta water, your pasta will be cakey and dry.
- Garnish with fresh basil, more parmesan and fresh cracked pepper. Slay.
