Description

Like dessert for breakfast, lemon cheesecake overnight oats are citrusy, creamy and like a big slice of lemon cheesecake to start your day!


Ingredients

Units Scale
  • 1/3 cup rolled oats
  • 1/3 cup plain Greek yogurt (I like to use 2%)
  • 2 teaspoons chia seeds
  • 1 teaspoon lemon curd
  • 2 tablespoons whipped cream cheese
  • 1/4 cup unsweetened almond milk

For topping: fresh strawberries, blackberries, blueberries, more lemon curd, crumbled graham cracker, granola, etc.


Instructions

Mix together all of the base ingredients: oats, yogurt, cream cheese, chia seeds, almond milk and lemon curd, until well combined in a small bowl, mason jar or overnight oats jar.

Store in the fridge for at least an hour but ideally overnight.

When ready to serve top with more lemon curd (necessary), crumbled graham cracker or granola and fresh berries!
