Description
Nuts, seeds, oats, spices, honey and coconut oil combine to make this simple, healthy and downright delectable homemade granola!
Ingredients
- 4 cups rolled oats
- 1 2/3 cups total nuts (I use 1/3 cup each almonds, cashews, walnuts, pecans and pepitas)
- 2 tablespoons ground flaxseed
- 2 tablespoons hemp hearts
- 1/2 teaspoon ground cinnamon
- 1 teaspoon sea salt
- 1/2 cup virgin coconut oil
- 1/2 cup honey or pure maple syrup
- 1 teaspoon pure vanilla extract
- Optional add-ins: 1/2 cup toasted coconut flakes, 1/2 cup dried fruit like cranberries, cherries, raisins, 1/2 cup mini or regular chocolate chips
Instructions
Preheat oven to 350 degrees.
In a large bowl combine oats, nuts, seeds, cinnamon and salt. Stir to combine.
Melt the coconut oil. Whisk in the honey or maple syrup and vanilla. Pour over oat/nut mixture. Stir well to combine and make sure all oats/nuts are moistened. Spread mixture on a silpat or parchment lined baking tray. Bake for 11 minutes. Remove and stir. Return to oven for another 10-11 minutes until oats are toasty golden and nuts are fragrant.
Remove from oven and add in mix-ins if desired. I LOVE adding toasted coconut flakes. The key if you like clumps of granola is to really press the mixture down in a compact, even layer before baking and allow to cool without stirring. Ideally, allow to cool without stirring for at least 30 minutes. The granola will continue to crisp up as it cools.
Store in an airtight container for up to 2-3 weeks or sealed in a gallon-sized Ziploc bag in the freezer for 3-4 months.
Enjoy with milk, yogurt, fruit or just straight up!

Use whatever combo of nuts and seeds you enjoy/have on hand.
To make this vegan, make sure to use maple syrup instead of honey.
To make this gluten free, ensure you are using certified gluten free oats.
