Description
Studded with bacon and tomatoes and piled high on crispy lettuce, this BLT-inspired chicken salad is a fabulously nutritious high-protein lunch!

- 4 cups cooked, shredded chicken
- 6 slices cooked bacon, chopped
- 1/2 cup cherry tomatoes, quartered
- 1/2 cup green onions, chopped
- 1/4 cup red onion, chopped
- 2oz sharp white cheddar, cubed (optional)
- 1/2 cup plain greek yogurt
- 1/3 cup mayo
- 1 lemon, juice of
- 1/2 teaspoon each salt, pepper, garlic powder, dried dill, onion powder and smoked paprika
- Romaine lettuce leaves, for serving
Instructions
- In a large bowl combine the chicken, chopped bacon, tomatoes, green onions, red onion and cheese.
- Whisk together the yogurt, mayo, lemon juice and all of the seasonings.
- Pour the dressing over the chicken and veggies and toss everything well to combine.
- Scoop the chicken salad into lettuce boats or onto crackers, toasted bread, English muffin or bagel.
