This fresh mint dressing blends mint, olive oil, lemon, honey, and garlic for a zesty, herb-packed vinaigrette perfect for salads, bowls, and more.

- 6 tablespoons olive oil
- 1/4 cup lemon juice
- 1 tablespoon honey
- 1 teaspoon dijon mustard
- 1/2 cup fresh mint
- 1 large clove garlic, roughly chopped or grated
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Combine all ingredients in a small food processor or the blender cup of a high powered blender. Blend until very smooth and creamy. Taste and season to taste, with another pinch of salt pepper, honey or lemon, per your preference.
- If you don’t have a food processor or blender you can finely mince the mint and garlic and whisk together the dressing ingredients. It will not be as creamy or cohesive, but it will still be delicious.
