Description

A zesty ginger lime dressing with fresh ginger, tangy lime, and a hint of sweetness—perfect for salads, veggies, or marinades.

 


Ingredients

Scale
  • 1/3 cup avocado oil
  • zest of 1 lime
  • 3 tablespoons lime juice (juice of 1-2 limes, depending on how juicy they are)
  • 2-inch knob ginger, finely grated
  • 1 tablespoon coconut aminos or soy sauce
  • 2 tablespoons honey
  • 1/4 teaspoon each salt and pepper

Instructions

  1. In a small blender or food processor, combine all ingredients and blend until creamy and cohesive. Taste and season with a little more lime or salt, per your taste. Alternatively, you can whisk or vigorously shake the ingredients together in a salad shaker or jar.
  2. Store in an airtight container or mason jar in the fridge for up to 10 days. Separation is normal, shake vigorously to re-emulsify. Serve on leafy green salads, as a marinade for protein, drizzled on roasted vegetables or in grain bowls.
