Description

Tender, chocolatey, and full of good-for-you ingredients, these chocolate oat muffins are a healthy snack that taste like a bakery treat!

Instructions

  1. Preheat oven to 350 degrees. Line a 12-cup muffin tin with muffin liners. Place 2 cups rolled oats in a high powered blender and blend for 20-30 seconds until the oats are a ‘flour’ consistency. You just made oat flour!
  2. Add ¼ cup cocoa powder, 1/2 teaspoon baking soda and 1/2 teaspoon salt to the blender and pulse another time or two to combine.
  3. To the blender, add 2 eggs, ⅔ cup cottage cheese, ⅓ cup maple syrup, ⅓ cup avocado oil, 1 mashed banana and 1 teaspoon vanilla extract. Blend until smooth. Fold in the chocolate chips/chunks. Pour batter in the prepared pan and sprinkle each muffin with a few more chocolate chunks.
  4. Bake for 14-16 minutes until a toothpick inserted comes out clean.


Notes

Mini muffins: makes 20-24 mini muffins. Bake at 350 degrees for 10-11 minutes.
