Description
Tender, chocolatey, and full of good-for-you ingredients, these chocolate oat muffins are a healthy snack that taste like a bakery treat!

			- 2 cups rolled oats
 - 1/4 cup cocoa powder
 - 1/2 teaspoon baking soda
 - 1/2 teaspoon salt
 - 2 eggs
 - 2/3 cup whole milk cottage cheese
 - 1 banana, mashed
 - 1/3 cup pure maple syrup
 - 1/3 cup avocado oil
 - 1 teaspoon vanilla extract
 - 3/4 cup chocolate chunks or chips or mix of both
 
Instructions
- Preheat oven to 350 degrees. Line a 12-cup muffin tin with muffin liners. Place 2 cups rolled oats in a high powered blender and blend for 20-30 seconds until the oats are a ‘flour’ consistency. You just made oat flour!
 - Add ¼ cup cocoa powder, 1/2 teaspoon baking soda and 1/2 teaspoon salt to the blender and pulse another time or two to combine.
 - To the blender, add 2 eggs, ⅔ cup cottage cheese, ⅓ cup maple syrup, ⅓ cup avocado oil, 1 mashed banana and 1 teaspoon vanilla extract. Blend until smooth. Fold in the chocolate chips/chunks. Pour batter in the prepared pan and sprinkle each muffin with a few more chocolate chunks.
 - Bake for 14-16 minutes until a toothpick inserted comes out clean.
 
Notes
Mini muffins: makes 20-24 mini muffins. Bake at 350 degrees for 10-11 minutes.
