Ingredients

- 1 medium delicata squash, seeds scraped out and cut into 1/2-inch slices
- 2 teaspoons olive oil
- 1/2 teaspoon each salt, pepper, dried thyme, garlic powder and brown sugar
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat air fryer to 400 degrees.
- Slice delicata squash in half lengthwise. Use a spoon to scrape out the ‘guts’ and seeds. Use a sharp chef’s knife to slice squash into ½-inch half-moon-shaped pieces. Toss the delicata squash with olive oil and seasonings.
- Place delicata squash pieces in the air fryer basket in an even layer with no pieces overlapping. Air fry for 10 minutes, shaking the basket at the halfway mark.
- Serve with a dipping sauce, on a salad or grain bowl, with protein of choice or straight up! Delicata squash fo’ evahhh.🤘🏼
Notes
Oven instructions: Preheat oven to 425 degrees. Slice and season delicata squash per the recipe. Place in an even layer on a baking sheet. Roast for 23-25 minutes, flipping the squash pieces halfway through cook time.
